These Low Carb Cauliflower Cheese Bites are the perfect grab and go snack when you need just a little bit more energy.
My daughter came home from school yesterday and was looking forward to having an after school snack. I gave her a plate of Cauliflower Cheese bites but didn't tell her what they were.
She popped one in her mouth and was very excited that I made macaroni and cheese bites for her! She was very surprised to find out that there wasn't any pasta in these Low Carb bites, but that they were filled with Cauliflower instead.
I love finding recipes with hidden ingredients that kids love! Can't beat replacing Cauliflower in many of our favorite recipes like Breakfast Quiche and Cauliflower Pizza Crust.
These cheesy cauliflower bites make a great low carb snack.
Low Carb Cauliflower Cheese Bites
Makes 24 large or 48 mini
5 egg whites
1/2 cup riced cauliflower (you can chop it yourself or buy it already chopped at your grocery store)
1 cup shredded cheese
1/4 cup shredded cheese
muffin tin
mini muffin tin
Cheesy Cauliflower Cheese Bites
- Preheat oven to 400 degrees.
- Mix Cauliflower, 1 cup shredded cheese and egg whites into a mixing bowl and let it sit for 5 minutes.
- Generously grease bottom of muffin tin. If you want mini low carb cauliflower cheese bites, use the mini muffin tin.
- Add approx 1 Tablespoon mixture to the bottom of your muffin tin. She above photo for reference. Sprinkle on extra shredded cheese.
- Bake at 400 degrees for 15 minutes. Edges with be golden brown.
- Let sit for 5 minutes, pop out of muffin tin with a spoon and enjoy crispy cauliflower and cheese bites immediately!
