This BBQ Stuffed Sweet Potato Recipe is perfect for fall.

These sweet potato skins are crispy, flavorful and stuffed with shredded chicken, bbq sauce and a whole lot of cheese. They make the perfect light meal or a delicious, crowd favorite, appetizer perfect for game days and parties! 

Fall means all things pumpkin and sweet potatoes, and yes, maybe cinnamon and butternut squash too, but mainly pumpkin and sweet potato. So when I was thinking about delicious recipes to share with you I knew I needed to find a way to include sweet potatoes

They are amazing. Totally delicious, crispy, just like what a good baked potato should be. They are also really easy to make, you don’t need to be an expert cook at all and you also don’t need to slave for hours in the kitchen to make them. Plus, they are as versatile as a recipe can be. So, can we just agree this sweet potato skins recipe is perfect?

Can you roast sweet potatoes with the skin? Can you eat the sweet potato skin?

There’s a lot of people that wonder if the sweet potato skin is edible, even my family asked when I told them I was planning to make this for dinner! The answer is yes! There are many great benefits of sweet potatoes. 

Healthy sweet potato skins are just like regular potato skin. Just like you can eat traditional potato skins you can also have sweet potato skins. We love eating sweets potato skins. 

Just make sure to really wash and scrub your sweet potatoes before roasting, but that same advice for all potatoes you are roasting.

How to stuff sweet potatoes?

Loaded sweet potatoes are delicious and can be made with different ingredients. You might like our Pizza stuffed sweet potato. They are very easy to make. I like to cut my sweet potatoes in half, scoop out some of the flesh and mix it up with the fillings. I find that cutting the potato in half results in a better ration of skin/filling. (You can use a baked sweet potato or a baked potato)

I stuffed these ones with a combination of shredded chicken (you can use some leftover chicken or even rotisserie chicken) bbq sauce and mozzarella cheese. 

Then just top everything with more mozzarella cheese and all the parmesan cheese your heart desires.

Stuffed Sweet Potato Recipe

Ingredients

3 Sweet potatoes, washed

3 Tbsp olive oil

½ Tsp paprika

½ Tsp garlic powder

½ Tsp onion powder

Salt and pepper to taste

2 Cups chicken, cooked and shredded

½ Cup BBQ sauce

1 Cup mozzarella cheese

¼ Cup Parmesan cheese

Directions

  1. Preheat oven to 425 degrees. Brush sweet potatoes with olive oil, sprinkle with paprika, garlic and onion powder and salt and pepper. Bake for 35 minutes or until done.
  2. Remove from oven and cut in half. With the help of a spoon scoop out some of the flesh. Save for later. 
  3. Brush the inside of the sweet potatoes with more olive oil and sprinkle with more salt and pepper. Take back for the oven and bake for 10 more minutes. 
  4. Meanwhile prepare the filling. Mash the sweet potato flesh, mix in the BBQ sauce and chicken. Incorporate half of the mozzarella cheese.
  5. Remove sweet potatoes from oven, stuff with the filling. Top with the remaining mozzarella cheese and sprinkle with Parmesan cheese. 
  6. Return to oven and bake for 15 more minutes or until cheese is melted and slightly golden.
