I have looked at other recipes that had you sauté, cook your noodles separately or added un-needed steps that made it that it took longer to get your soup to your belly than it should have.
Goal: soup to belly as fast as possible. Right??? This is a dump it all in then eat it has soon as it is done recipe. I love onepot meals.

We make a turkey a few times a year and we always have leftover turkey. Leftover Thanksgiving turkey is perfect for this soup recipe. Naturally, you could use chicken, too.
But that doesn't solve turkey leftovers problem… because we always have leftover thanksgiving turkey. And turkey soups are the perfect way to use you turkey meat.

If you are family of 2 you could use an 3 quart instant pot. You would use only 1 carton of chicken broth and adjust your ingredients accordingly. Personally, this Instant Pot soup recipe was made in an 8 quart instant pot. I used the Instant Pot Ultra 8 Qt 10-in-1 Multi- Use Programmable Pressure Cooker.
I always use chicken broth from a carton in making my soup. But if you are cooking turkey at Thanksgiving and still have the turkey carcass you can always make your own homemade turkey stock.
This recipe cooks in 7 minutes, but it is important to remember that when you are using instant pot recipes, the actual cook time is longer because you will have to wait for your Instant Pot to come to pressure and there is time waiting for the quick release. It took my Instant pot about 20 minutes to pressureize and 8 minutes to release pressure. Total time being around 36 minutes.
Instant Pot Turkey Noodle Soup
3 cartons Chicken Broth ( or homemade turkey stock) (12 cups)
2 cups cubed potatoes
2 cups carrots, sliced
1 large white onion, but into medium sized pieces
4 cups egg noodles
2 tsp ground thyme
2 tsp salt
1 tsp pepper
4 bay leaves
3 cups leftover turkey meat (leftover, pre-cooked)
NOTE: You are NOT adding the leftover Turkey until after your soup is cooked!
Directions
- Add broth to Instant Pot.
- Add cubed potatoes, carrots and white onions.
- Add egg noodles and stir everything together.
- Add all seasonings and stir.
- Put on lid and cook HIGH Pressure for 7 minutes.
- Quick Release. Remove lid.
- Remove bay leaves.
- Stir in Leftover turkey.
- Feel free and add extra salt and pepper to taste.
