There's something comforting about homemade pizza. Maybe it’s the fact that you can make it a family tradition where everyone is cooking and picking their favorite toppings. Maybe it’s the fact that’s really easy to make (especially if you start with store-bought dough and sauce). Or maybe it’s the fact that pizza is always delicious.
This fall harvest pizza is all of that! It’s easy enough to make it a weeknight tradition. However, all the flavors are amazing and powerful and really pack a punch so it's also perfect to make it on weekend nights.
Oh, and it literally has all the fall flavors we know, love, and crave!

So, how to make a Pumpkin Harvest pizza:
- Start by roasting the pumpkin. We roast it with just a little bit of brown sugar so it caramelizes FAST! The roasted pumpkin is honestly the best part of this pizza. It's so good you can even make a big batch to have on hand and use it to top pasta and salads.
- After that, we have the caramelized onions. However, these are not your traditional caramelized onions. These are fall onions! We are caramelizing them with apple cider to make them sweeter.
- Top your pizza with some blue cheese. The strong blue cheese balances all the sweetness in the pumpkin and onions.
- And finally, go big with the crispy bacon. It's what brings everything together (plus, we all love bacon).
However, feel free to play with the ingredients as much as you like: Swap the pumpkin for roasted butternut squash or acorn squash. Add more roasted veggies. Get rid of the blue cheese and use a strong parmesan cheese or cheddar cheese instead. The great thing about this pizza is that you can pretty much customize it as you wish.

Fall Pumpkin Pizza
Ingredients
Pizza dough
1 Cup pumpkin, diced
1 Tbsp olive oil
1 Tbsp butter
1 Tsp brown sugar
1 Red onion, chopped
½ Cup apple cider
1 Cup tomato sauce
2 Cups mozzarella cheese
⅓ Cup bacon, cooked
¼ Cup blue cheese, crumbled

Directions
Preheat oven to 350 degrees. Place cubed pumpkin in a baking pan and drizzle with olive oil and sprinkle with brown sugar. Season with salt and pepper and roast for 15 minutes.
Meanwhile cook the caramelized onion. In a saucepan over medium heat melt butter. Add chopped onion and cook until translucent (around 8 minutes). Pour apple cider, salt and pepper and cook until the apple cider is reduced.
Preheat oven to 425 degrees.
Assembly the pizza. Roll the dough. Spread the tomato sauce on top and add the mozzarella cheese and cooked bacon. Top with caramelized onion and caramelized pumpkin. Finish with blue cheese.
Take to the oven and bake for 20 minutes or until done.
