Iced Pumpkin Cookies

It is starting to feel like fall which means it was time to bake up a batch of Iced Pumpkin Cookies.My husband and I took a drive through recently and the trees were starting to change colors! I can't tell you how happy this makes me. I love fall. I love decorating for fall, baking and enjoying the cooler weather. My favorite tree is an Aspen and they turn such a beautiful color during the fall season. Just talking about fall makes me happy. I always joke with my husband that September 1st is close enough to fall and time to start baking everything Pumpkin. Pumpkin Pie, Iced Pumpkin Cookies, Pumpkin Bread, etc. Everything Pumpkin. Here is one of my favorite Pumpkin Recipes.

Iced Pumpkin Cookies

Ingredients
1 cup butter
1 cup sugar
1 cup pumpkin
1 egg
1 t. vanilla
2 cups flour
1 t. baking powder
1 t. baking soda
1 t. cinnamon
1 t. nutmeg
1 t. ginger

Icing Ingredients
2 cups Powder Sugar
2 t. vanilla
3 T. milk
1 T. butter

Directions
1. Preheat oven to 350 degrees.
2. Mix wet ingredients in bowl and combine completely. Add dry ingredients to wet ingredients.
3. Spoon about a Tablespoon size of batter onto cookie sheet. Allow room for spreading. I typically make 9 cookies per batch.
4. Bake for 10-12 minutes. Cookies will be soft.
5. While cooling prepare Icing. Mix all ingredients with a hand mixing until combined. Then spread over cooled cookies.
6. Enjoy! Happy Fall!
