If your kids love finding hidden mickey's they will love this Hidden Mickey Loaf Cake.I have always loved the cakes where people hide fun shapes in them. I think one of the first ones that I saw was used with a pumpkin cookie cutter. This recipe is fun because really you can replace the cookie cutter shape and color choices to work for any holiday or event. This Hidden Mickey Loaf Cake is a festive way to celebrate the holidays with our favorite Mickey Mouse.
Hidden Mickey Loaf Cake
Ingredients
1 box of french vanilla cake mix
3 eggs
1/2 C (1 stick) of softened unsalted sweet cream butter
1 C whole milk
1 TBSP pure vanilla bean paste
green gel food coloring
1 loaf pan
1 box of red velvet cake mix
3 eggs
1/2 C unsalted sweet cream butter
1 C whole milk
1 loaf pan
1 mickey mouse gingerbread man cookie cutter (If you cant find the gingerbread cutter you can use a Mickey Ears Cookie Cutter)
Directions
- Preheat oven to 350 degrees.
- Spray 1 loaf pan with cooking spray and set aside.
- Using a stand mixer, make the red velvet cake mix.
- Pour batter into the loaf pan and cake into the oven for 45 minutes or until a toothpick comes out of the center clean.
- Once baked, set onto the counter for an hour or until completely cooled.
- Take cooled loaf out of the pan and place onto a cutting board.
- Cut 2 inch thick slices of the loaf and lay flat onto the cutting board
8. Using the cookie cutter, cut out the shapes.
9. Discard scraps and let the cut shapes sit on the cutting board while you prep the green cake batter.
10. Once green cake batter is made, spray the other loaf pan with pam spray.
11. Pour some batter into the loaf pan just to cover the bottom.
12. Place the cut shapes standing up into the cake batter.
13. Fill in with the remaining cake batter until the mickey shapes are covered.
14. Bake in the oven for 45 minutes or until a tooth pick comes out clean.
15. Once baked, set on a wire rack to cool.
16. Once cooled take loaf out of pan and set onto the cutting board
Frosting Ingredients
1 C unsalted sweet cream butter, softened
2 1/2 C powder sugar
1 tsp vanilla
3-5 TBSP heavy whipping cream
medium star tip and pastry bag
red and green M&M's
Directions
- Using a standing mixer, combine all ingredients into the bowl and mix on medium speed.
- If your frosting starts looking like powdery rocks, add another tablespoon of heavy whipping cream.
- Mix until you see creamy stiffed peaks.
- Scoop some frosting into the piping bag.
- Pipe frosting all around the loaf.
- Using the M&M's place 3 in the shape of mickey's head all around the loaf cake.
- Let frosting harden for about 30 minutes before enjoying!
