Baby its cold outside. 🙂 I’m not sure what the weather is like where you are, but it is getting cold here in Utah. The leaves have fallen off the trees, the sky is starting to get darker and all signs up Winter are creeping in. The weather report says that we are supposed to get our first snowfall on Thursday. This is the time of the year where I like to eat soup for every meal because my body just can’t seem to shake off the winter chill. There is nothing better than a warm bowl of soup to make your tummy happy.
I love making soup. My favorites are Chicken Noodle Soup and Cream Potato Soup. My husband came home from work this week with a large bag of potatoes so I instantly started craving a delicious bowl of Cheesy Potato Soup. This recipe is my kids favorite that we make every year on their birthday. I love using the Swanson starters because not only do they make the recipe delicious, but it is so simple to make. They Swanson creamy starters are perfect for potato soup and I always add Chicken broth for extra flavor. This recipe is shown to make 4 servings. We double our recipe so we can have leftovers! Enjoy!
Cheesy Potato Soup
1 lb. russet potatoes, peeled and cut into pieces
2 T. butter
1/2 t. salt
1/2 t. pepper
1 clove garlic
1 carton Swanson Cream Starter
1 carton Swanson Chicken Broth
3 cups shredded cheese
1. Melt butter in sauce pan over low heat and add onions and garlic until slightly browned.
2. Mix in Swanson Cream Starter and Swanson Chicken Broth and heat until just boiling.
3. Add potatoes and salt and pepper to taste.
4. Continuously stir in cheddar cheese until melted.
5. Cover and cook on low for 2 hours or until Potatoes are soft.
6. Top with 1 T shredded cheese, pepper flakes and parsley flakes.
This recipe could also be easily made in a crockpot. All you would need to do is add all ingredients except salt and pepper in the crock pot. Cook on low for 8 hours. When finished cooking, add salt and pepper to taste. To stay happy and warm this summer, visit Swanson online for great recipes!
