Crock Pot Chicken Barley Soup
Ingredients
2 pieces of chicken
1 cup barley
1 cup celery
1 cup carrots
1 sweet bell pepper
1/2 onion
1 cup green beans
1 cup diced tomatoes
1 cup frozen corn
6 cups chicken broth
Fresh Rosemary
Fresh Basil
Salt
Pepper
Whole Wheat Tortilla Strips
Sour Cream
Add TWO pieces of Frozen Chicken to the Bottom of your Crock Pot
Add 1 Cup Barley on top of your chicken.
Next add your cut up celery and carrots.
Now add your onions and sweet peppers.
Add 1 cup frozen corn
Add 1 cup green beans. I prefer canned French Style Green Beans.
Add 1 cup diced tomatoes.
Add 6 cups Chicken Broth. If you have a bigger crock pot. I recommend adding 1 or 2 more.
Add 2 sprigs Rosemary and 2 Fresh Basil Leaves
Cook on Low for 6 hours. It will look like this when it is finished.
Add Salt and Pepper to taste. We added about 1 teaspoon of each.
At this point, you need to remove the chicken, shred it to desired size and return to your crock pot. Mix all ingredients together, enjoy the delicious smell of your homemade soup, and set your table to eat! Top your Soup with Whole Wheat Tortilla Strips, 1 T sour cream and a rosemary sprig.
