Did you know that Experts recommend that women consume less than 6 teaspoons of added sugar daily, but the average American eats 22.2 teaspoons!!!! Yikes. When I look back at what I eat during the day, I see that I am probably guilt of having way too much sugar. I just love my sweets so much! 🙂 Luckily, I have a solution to this problem. SPLENDA®. A few weeks ago, I wouldn't have even considered SPLENDA®. I had never tried it before but I assumed that because it didn't have the higher calories that it wouldn't taste any good. I was challenged to bake my favorite recipe and replace the sugar with America's No. 1 no-calorie sweetener, SPLENDA®. My go to favorite recipe is banana bread recipe with splenda so I decided to give it a try.
As part of this challenge I received a selection of SPLENDA® product to try in my recipes. This included:
- Splenda No Calorie Sweetener, Packets
- Splenda No Calorie Sweetener, Granulated
- Splenda No Calorie Sweetener Flavors for Coffee, French Vanilla
- Splenda Sugar Blend*
- Splenda Brown Sugar Blend*
The two Splenda products that I used in my banana bread recipe were the Splenda No Calorie Sweetener, Granulated and the Splenda Brown Sugar Blend.
I was completely caught off guard by the Splenda No Calorie Sweetener, Granulated. It has almost a weightless powder like texture. The bag was very light compared to sugar. I tasted it before cooking and was surprised to see that it tasted great without any kind of after taste. When baking with Splenda No Calorie Sweetener you measure cup-for-cup just like you would with sugar. The great part, is that it contains 678 calories LESS than sugar on a cup-for cup basis! Wow!
The Splenda Brown Sugar Blend packs into a cup just like traditional brown sugar and is full of delicious sweet flavor. This is a mix of brown sugar and SPLENDA Brand Sweetener. When replacing with Splenda Brown Sugar Blend you use a half of a cup instead of a full cup which gives you half the sugar. The recipe that I use calls for both sugar and brown sugar so I replaced with Splenda No Calorie Sweetener, Granulated and the Splenda Brown Sugar Blend. Here is my Banana Bread Recipe. I hope you like it!
Banana Bread Recipe
1. Mix Bananas and sugars until well blended.
2. Add vanilla, softened butter and eggs and mix.
3. Stir in dry ingredients. Your batter will look like the photo below when mixed. Batter may be lumpy.
4. Pour mixture in pan sprayed with cooking spray. I baked mine in a loaf as well as mini loaves. (My mini loaves are actually the Wilton Twinkies pan)
5. Bake loaf at 325 degrees for 50 minutes and mini loafs for 20 minutes. As always, oven temperatures vary so you may need to give or take a few minutes. I love eating my banana bread warm out of the oven but it tastes delicious cold, too.
