I need a really good breakfast before going to work. Work days can be long and hard and if I don’t eat well before I go, they are often more exhausting. I have found that if I start my day out with a high in protein Omelette, then I have a lot more energy until the next meal. I have tried a lot of different protein meals but I have found that eggs are my breakfast of choice. Here is my Healthy Turkey Spinach Omelette recipe that I have been using to help give me energy and help on my weight loss journey.
Healthy Turkey and Spinach Omelette
2 whole eggs
3 egg whites
1 laughing cow lite cheese spread (35 cal)
1/2 cup spinach
4 oz low sodium deli turkey
2 tbsp salsa
Mix eggs, cook on medium heat in a greased pan (use no calorie cooking spray) covered. As egg almost finishes setting, flip and set to low.
Add cheese spread (just drop dollups) on one half. On same half, lay out turkey. Cover turkey with spinach. Close omelette by folding in half. Recover and wilt spinach on low for another minute (careful not to over cook).
Top with Salsa and enjoy.
