Oatmeal Crème Pies

Ingredients

  • ¾ cup butter softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • teaspoons vanilla extract
  • 1 tablespoon molasses
  • 2 cups all-purpose flour
  • ¼ teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 2 cups rolled oats
  • 1 recipe Crème Pie Frosting

  • ½ cup butter softened
  • 2½ to 3 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla
  • Pinch salt

Instructions

  • Preheat oven to 375 degrees F.
  • Line baking sheets with parchment paper.
  • In a large bowl with an electric mixer, cream together butter, brown sugar, and sugar on medium speed until light and creamy, about 2 minutes.
  • Add eggs, vanilla, and molasses and mix until well combined.
  • In a medium bowl whisk together the flour, baking soda, baking powder, salt, cinnamon, cloves,
  • nutmeg, and oats.
  • Slowly add the dry ingredients to the wet ingredients. The dough will be thick
  • and may need to be mixed by hand at the end.
  • Roll dough into 1-inch balls and place on prepared baking sheets.
  • Cook 10 minutes, until cookies are golden around the edge.
  • Cool on cookie sheet 2 minutes before transferring to a wire rack to cool completely.
  • While the cookies are cooling, prepare the Crème Pie Frosting.
  • Spread 1 to 2 tablespoons Crème Pie Frosting on the flat side of a cookie and top with another cookie, flat side down.
  • Repeat to fill remaining cookies.

  • In a medium bowl, with an electric mixer, beat butter for about 1 minute, until creamy.
  • Add powdered sugar, heavy cream, vanilla, and salt.
  • Beat on high until smooth and creamy, about 3
  • minutes.
