Cilantro Taco Bowl

Ingredients

  • 3 Cups rice
  • 1 Avocado
  • 1 Cup cherry tomatoes
  • 3 Cups lettuce
  • Pinch of salt
  • 1/2 Tsp onion powder
  • 1/2 Tsp paprika
  • 1/2 Tsp cumin
  • Optional: 2 Cups black beans
  • For the dressing
  • 1 Cup Greek yogurt
  • 1/4 Cup olive oil
  • 1/8 Cup lemon juice
  • 1/4 Cup chopped cilantro

Instructions

  • Cook the rice in boiling water for 20 minutes or as directed on the package. Add a pinch of salt, onion powder, paprika, and cumin.
  • Half de tomatoes, slice the avocado and set aside.
  • For the dressing, take all the ingredients to a bowl and mix until well incorporated.
  • Serve the rice in bowls, add the lettuce, tomato halves, and avocado slices.
  • Top with the dressing and enjoy.
