Preheat oven to 425 degrees. Brush sweet potatoes with olive oil, sprinkle with paprika, garlic and onion powder and salt and pepper. Bake for 35 minutes or until done.
Remove from oven and cut in half. With the help of a spoon scoop out some of the flesh. Save for later.
Brush the inside of the sweet potatoes with more olive oil and sprinkle with more salt and pepper. Take back for the oven and bake for 10 more minutes.
Meanwhile prepare the filling. Mash the sweet potato flesh, mix in the BBQ sauce and chicken. Incorporate half of the mozzarella cheese.
Remove sweet potatoes from oven, stuff with the filling. Top with the remaining mozzarella cheese and sprinkle with Parmesan cheese.
Return to oven and bake for 15 more minutes or until cheese is melted and slightly golden.
