Stuffed Sweet Potato Recipe

  • 3 Sweet potatoes washed
  • 3 Tbsp olive oil
  • ½ Tsp paprika
  • ½ Tsp garlic powder
  • ½ Tsp onion powder
  • Salt and pepper to taste
  • 2 Cups chicken cooked and shredded
  • ½ Cup BBQ sauce
  • 1 Cup mozzarella cheese
  • ¼ Cup Parmesan cheese


  • Preheat oven to 425 degrees. Brush sweet potatoes with olive oil, sprinkle with paprika, garlic and onion powder and salt and pepper. Bake for 35 minutes or until done.
  • Remove from oven and cut in half. With the help of a spoon scoop out some of the flesh. Save for later.
  • Brush the inside of the sweet potatoes with more olive oil and sprinkle with more salt and pepper. Take back for the oven and bake for 10 more minutes.
  • Meanwhile prepare the filling. Mash the sweet potato flesh, mix in the BBQ sauce and chicken. Incorporate half of the mozzarella cheese.
  • Remove sweet potatoes from oven, stuff with the filling. Top with the remaining mozzarella cheese and sprinkle with Parmesan cheese.
  • Return to oven and bake for 15 more minutes or until cheese is melted and slightly golden.
