Pumpkin Pizza

This fall harvest pizza screams autumn! It has all the cozy ingredients we crave: Roasted pumpkin, blue cheese, apple cider caramelized onions, and even some crispy bacon. A delicious homemade pizza recipe that everyone will love!

Ingredients

  • Pizza dough
  • 1 Cup pumpkin diced
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 Tsp brown sugar
  • 1 Red onion chopped
  • ½ Cup apple cider
  • 1 Cup tomato sauce
  • 2 Cups mozzarella cheese
  • Cup bacon cooked
  • ¼ Cup blue cheese crumbled

Instructions

  • Preheat oven to 350 degrees. Place cubed pumpkin in a baking pan and drizzle with olive oil and sprinkle with brown sugar. Season with salt and pepper and roast for 15 minutes.
  • Meanwhile cook the caramelized onion. In a saucepan over medium heat melt butter. Add chopped onion and cook until translucent (around 8 minutes). Pour apple cider, salt and pepper and cook until the apple cider is reduced.
  • Preheat oven to 425 degrees.
  • Assembly the pizza. Roll the dough. Spread the tomato sauce on top and add the mozzarella cheese and cooked bacon. Top with caramelized onion and caramelized pumpkin. Finish with blue cheese.
  • Take to the oven and bake for 20 minutes or until done.
