  • 12 slice pre-cooked bacon
  • 12 large organic brown eggs
  • 2 c. cheese
  • 1 T. Chives
  • 1 T. dried onion
  • salt and pepper to taste

Directions

  • Preheat oven 375 degrees.  Place rack on middle rack.
  • Spray bottom of muffin tin.
  • Wrap one piece of pre-cooked bacon around each muffin cup.
  • In medium bowl beat eggs, cheese, chives, onions and salt and pepper.
  • Pour egg mixture into muffin tin to top of muffin cup.
  • Bake for 13-15 minutes.
  • Sunnyside Up Bacon and Egg Cup Variation
  • Spray bottom of muffin tin.
  • Wrap one piece of pre-cooked bacon around each muffin cup.
  • Add 1 T. Cheese on bottom of each muffin cup
  • Sprinkle with a dash of dried chive and dried onion.
  • Break one egg over cheese.
  • Sprinkle with salt and pepper.
  • Bake for 13-15 minutes.

Bacon and Egg Cup Topping

  • 1  cup sour cream
  • 1 t. crushed chipotle
  • 1 t. dried chives
  • 1 t. taco seasoning
  • 1 t. dry garlic
  • 1 t. dry onion
  • Mix all ingredients in Blendtec Blender.
