  • 12 slice pre-cooked bacon
  • 12 large organic brown eggs
  • 2 c. cheese
  • 1 T. Chives
  • 1 T. dried onion
  • salt and pepper to taste

Directions

  1. Preheat oven 375 degrees.  Place rack on middle rack.
  2. Spray bottom of muffin tin.
  3. Wrap one piece of pre-cooked bacon around each muffin cup.
  4. In medium bowl beat eggs, cheese, chives, onions and salt and pepper.
  5. Pour egg mixture into muffin tin to top of muffin cup.
  6. Bake for 13-15 minutes.
  7. Sunnyside Up Bacon and Egg Cup Variation
  8. Spray bottom of muffin tin.
  9. Wrap one piece of pre-cooked bacon around each muffin cup.
  10. Add 1 T. Cheese on bottom of each muffin cup
  11. Sprinkle with a dash of dried chive and dried onion.
  12. Break one egg over cheese.
  13. Sprinkle with salt and pepper.
  14. Bake for 13-15 minutes.

Bacon and Egg Cup Topping

  1. 1  cup sour cream
  2. 1 t. crushed chipotle
  3. 1 t. dried chives
  4. 1 t. taco seasoning
  5. 1 t. dry garlic
  6. 1 t. dry onion
  7. Mix all ingredients in Blendtec Blender.
