The BEST Twice-Baked Potatoes

Easy recipe for cheesy, bacon-loaded twice-baked potatoes. Perfect comfort food for weeknights or parties!


Step 1: Bake & Scoop – Preheat oven to 400°F. Scrub potatoes, pierce with a fork, then rub with oil and salt. – Bake potatoes directly on the rack for 45-60 minutes, until easily pierced with a fork. – Let cool slightly, then cut in half lengthwise and carefully scoop out the insides.

Step 2: Creamy Filling – Mash the potato insides with sour cream, milk, butter, half the cheese, half the bacon, half the scallions, salt, and pepper. – Mix until the filling is creamy and well-combined.

Step 3: Fill & Top – Spoon the potato filling back into the potato shells. – Sprinkle the remaining cheese and bacon over the top.

Step 4: Final Bake & Enjoy – Bake for an additional 15-20 minutes, until cheese is melted and bubbly. – Sprinkle with remaining scallions, let cool slightly, then serve and enjoy!
