Stuffed Sweet Potato Recipe

These sweet potato skins are crispy, flavorful, and stuffed with shredded chicken, BBQ sauce and a whole lot of cheese.

They make the perfect light meal or a delicious,  crowd-favorite appetizer, perfect for game days and parties!

INGREDIENTS

Sweet potatoes olive oil paprika garlic powder onion powder chicken

Preheat the oven to 425 degrees. Brush sweet potatoes with olive oil and sprinkle with paprika, garlic and onion powder, salt, and pepper. Bake for 35 minutes or until done.

Remove from the oven and cut in half. With the help of a spoon, scoop out some of the flesh. Save for later.

Brush the inside of the sweet potatoes with more olive oil and sprinkle with more salt and pepper. Take it back to the oven and bake for 10 more minutes.

Meanwhile, prepare the filling. Mash the sweet potato flesh and mix in the BBQ sauce and chicken. Incorporate half of the mozzarella cheese.

Remove the sweet potatoes from the oven and stuff with the filling. Top with the remaining mozzarella cheese and sprinkle with Parmesan cheese.
