Potato, Egg and Veggie Breakfast Empanadas

The Potato, Egg, and Veggie Breakfast Empanadas is my favorite one that we have tried so far because it has so much flavor with the onions, peppers, and potatoes.

We didn't add any cheese to ours, but this is definitely something that you could add. Just shred your cheese and add some before closing your empanadas.

INGREDIENTS

Pillsbury Pie Sheets red pepper green pepper red onion eggs potatoes

Cube potatoes into small bite-sized pieces.

Dice the peppers and onions until small.

Brown peppers and potatoes on the stovetop.

Brown the onions in a separate pan. These won't cook as long as the potatoes.

If you decide, cook bacon and drain.
