Best keto almond joy cookies

Absolutely love these Keto Almond Joy Cookies! They offer the perfect blend of sweetness and nutty flavor without derailing my keto lifestyle.

The texture is spot on - soft, with a delightful crunch from the almonds. They've become a household favorite and are on my baking roster now.


– Almond flour – Unsweetened coconut flakes – Large eggs – Baking powder – Swerve confectioners sugar substitute – Butter (softened) – Almond extract – Chopped almonds (plus whole almonds for garnish, if desired) – Keto chocolate chips – Salt

In a mixing bowl, combine the almond flour, Swerve sugar substitute, baking powder, eggs, butter, salt, and almond extract. Blend them together until you have a smooth mixture.

Gently fold the coconut flakes, chopped almonds, and chocolate chips into the blended mixture.

Take portions of the mixture and form into 15 evenly sized cookies. Arrange these cookies on a baking sheet lined with parchment paper.

Place the baking sheet in the oven and bake for a span of 10-12 minutes, or until the bottoms of the cookies have turned golden brown and are fully cooked.

Once done, remove the cookies from the oven and allow them to cool down to room temperature before handling.
