Instant Pot Pork Lo Mein

INGREDIENTS

– Spaghetti – Center cut pork – Water – Red bell pepper – Baby bok choy – Carrots – Yellow onion – Garlic cloves – Dark soy sauce – Light soy sauce – Hoisin sauce – Sesame oil – Mirin – Choice of oil (vegetable, canola, etc.) – Salt (optional) – Pepper (optional) – Sesame seeds (optional)

Begin by dicing the pork, slicing the red bell pepper and baby bok choy, chopping the carrots, mincing the onion and garlic cloves, and setting aside your sauces and seasonings. This will streamline the cooking process.

Marinate the pork in dark soy sauce and sesame oil, then sauté in the Instant Pot until golden brown. Remove and set aside.

Add water to the Instant Pot, then place broken spaghetti in a crisscross pattern. Pressure cook on high for 4 minutes, followed by a quick release and a 4-minute rest.

Open the pot, stir the noodles, and mix in the dark soy sauce, light soy sauce, hoisin sauce, and mirin.

Turn on the sauté setting, add the pork, sliced vegetables, and sauté for 5-8 minutes. Garnish with sesame seeds, season as needed, and serve hot.
