Orzo Salad Recipe with Feta Cheese

Orzo salad, with its simplicity and versatility, has always been a favorite of mine, and I can't wait for you to try it out!

INGREDIENTS

– Dry orzo pasta – Cherry tomatoes – Persian cucumbers – Red onion – Kalamata olives – Feta cheese – Fresh parsley – Extra virgin olive oil – Red wine vinegar – Lemon – Garlic clove – Salt – Pepper

Process Video

1. Cook orzo pasta as per instructions until al dente, then rinse with cold water and drain.

2. In a large bowl, mix cooked orzo with cherry tomatoes, Persian cucumbers, red onion, kalamata olives, and feta cheese. Add chopped parsley.

3. Whisk olive oil, red wine vinegar, lemon juice, garlic, salt, and pepper in a small bowl to make the dressing.

4. Pour dressing over salad, toss gently, and season to taste. Chill for 30 minutes before serving.
