Cilantro Taco Bowl

This cilantro taco bowl is jam-packed with flavor and a delicious dinner option for those busy days.

It's light, it's flavorful, it's creamy, and it goes great with salads, sandwiches,  bowls, and just about anything that would benefit from an extra dose of flavor.

INGREDIENTS

rice Avocado cherry tomatoes  lettuce onion powder cilantro

Cook the rice in boiling water for 20 minutes or as directed on the package. Add a pinch of salt, onion powder, paprika, and cumin.

Half the tomatoes, slice the avocado, and set aside.

For the dressing, take all the ingredients to a bowl and mix until well incorporated.

Serve the rice in bowls, add the lettuce, tomato halves, and avocado slices.

Top with the dressing and enjoy.
