Carrot Cupcakes with Cream Cheese Frosting

If you don't love carrot cupcakes, we can't be friends 😜 Seriously though, this recipe is AMAZING!

INGREDIENTS

In a medium bowl, whisk together dry ingredients . In a large bowl, combine wet ingredients and mix until creamy. 

Gently fold in grated carrots and chopped nuts (optional)

Fill cupcake liners 3/4 full and bake according to recipe.

Bake in the preheated oven for 20-24 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Use a piping bag or an offset spatula to generously frost each cupcake with the cream cheese frosting.
