The Ultimate Avocado Deviled Eggs

Ditch the heavy mayo and try this lighter, healthier avocado deviled eggs recipe! Creamy, zesty, and packed with good fats, it's a guilt-free party appetizer you'll love.

INGREDIENTS

Start by getting those eggs hard-boiled. I like the instant pot method – it's super easy! Of course, you can boil eggs in a pot of water on the stovetop too. 

While your eggs cool, peel and mash your avocado in a mixing bowl.

Cut those hard-boiled eggs in half lengthwise and scoop those yummy yolks into the bowl with the avocado. Add the sour cream, lemon juice, salt, and pepper, and mash everything until it's beautifully combined.

Rinse out the egg whites and gently pat them dry. Spoon the avocado mixture into a piping bag (or even a plastic bag with the corner snipped off) and pipe that deliciousness right back into the white halves.

Sprinkle with paprika and maybe add a little parsley sprig for an extra pop of color and freshness.
