Lemon Glazed Blueberry Zucchini Bread


3 1/2 c. whole wheat flour
2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon baking powder
1 1/4 teaspoon baking soda
1 teaspoon salt
zest of 1 lemon
2 c. brown sugar
2 eggs
1/2 cup vegetable oil
1/2 cup applesauce
3 cups shredded zucchini
2 cups blueberries


Lemon Glaze

1 1/2 cup powdered sugar
4 T. lemon juice
1. T milk


I love farmers markets. They are full of such delicious sweet goodness. I bought some zucchini this last weekend at the Farmers market and wanted to make something fabulous with it. I asked my readers for suggestions of what to make with my zucchini and blueberries and their ideas helped me come to this recipe. It is a lot of ingredients, but really very simple to make and tastes divine. If you don’t like lemons, you can always leave off the glaze and it still tastes delicious. Although, I thought the lemon glaze really added to making the bread exceptional.

Woah, this bread is delicious. A perfect mixture of sweet, and fall and harvesty goodness. I am not fancy at all in my cooking. I follow recipes for the most part, but it drives me crazy to have a million bowls out, so in this recipe, I just added everything in order and then mixed. It came out moist enough and delicious.

  1.  Preheat oven to 350 degrees.
  2.  Mix ingredients as listed above in order minus blueberries. (If you like the two bowl cooking, mix dry ingredients in one, wet in the other than combine, but I didn’t find it necessary.)
  3.   Stir in blueberries
  4.  Great and pour batter into 13×9 baking dish.
  5.  Cook for 50 min- 1 hour depending on oven.
  6.  While cooking make glaze by mixing powdered sugar, milk and lemon juice. 
  7.  When your bread is cool, pour glaze evenly over bread.
