Fall Harvest Bread Recipe

I don’t know what it is, maybe its just my love of fall, but there is something about this time of year that makes me want to bake. I love cooking with pumpkins, squash, and zucchini’s and the smells of ginger, cinnamon and nutmeg. It really is a delicious time of year!

This is also the time of year when we get our town farmers market. This is one of my favorite things to do on the weekends. This week, I bought zucchini, pumpkin and squash and decided to turn it into a fall harvest bread. 

I tried this recipe out two ways. First, I cooked in in the bread machine and secondly in the oven.

Fall Harvest Bread
1/3 cup vegetable oil
3 large eggs
1/2 cup pumpkin puree
1/2 cup squash puree
1/2 cup zucchini puree
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
3 cups all-purpose flour

1. Add all ingredients in order to your bread machine pan.
2. Set bread machine to the quick bread/ cake cycle.
3. When finished cooking, remove from pan and cool.

This was really easy to make because this cycle mixes your batter and cooks it all for you. I love bread machines. This bread was delicious, moist and full of flavor. Add a little honey butter for extra deliciousness.

Fall Harvest Bread Recipe

As mentioned above, I made this recipe both for the bread maker and oven to compare the differences. I added white chocolate chips for the bread that I cooked in the oven. Here is how I made this one:

1. Pre-heat oven 350 degrees
2. Grease bread pan with butter and flour
3. Mix first 6 ingredients until moistened
4. Add dry ingredients and mix
5. Add white chocolate chips
6. Pour batter into prepared bread pan
7. Cook for 50 minutes- 1 hour 

Where both ways turned out delicious, they turned out very different. The bread machine Harvest Bread was a much lighter flavor and more like a sliced bread, where the oven bread was much sweeter from the white chocolate chips and very moist.
